Vanilla Oat Protein Cookies
(Makes 12-14 cookies)


  • 3 tbsp coconut oil, melted
  • 3 tbsp maple syrup or honey
  • 2 tbsp peanut butter
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • ½ cup rolled oats
  • 1 scoop Daily Protein
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • ⅛ tsp salt


Preheat the oven to 350º F. Line a baking sheet with parchment paper.

In a large bowl, whisk together the coconut oil, maple syrup or honey, peanut butter, and vanilla extract. Add the almond flour, oats, Daily Protein, cinnamon, baking soda, and salt. Use a rubber spatula to mix everything together until thoroughly combined.

Use a tablespoon to scoop the batter onto the baking sheet. Roll into balls and flatten with your fingertips (it helps to wet your hands with water to prevent sticking).

Baking for 10 minutes, or until the bottoms are golden brown. Let cool completely before storing in an airtight container or resealable bag in the fridge or freezer.
