Chocolate Zucchini Superfood Muffins

- 2 cups grated zucchini (about 1 large)
- 2 eggs
- ⅓ cup olive oil or coconut oil, melted
- ¼ cup maple syrup
- 2 cups rolled oats
- 1 cup almond flour
- ¼ cup cocoa powder
- 1 scoop Daily Superfoods
- 1 tsp baking soda
- ½ tsp salt
- ½ cup chocolate chips
Preheat the oven to 350F. Line a standard muffin pan with muffin cups.
In a large bowl, whisk together the zucchini, eggs, olive oil or coconut oil and maple syrup. Add the oats, almond flour, cocoa powder, Daily Superfoods, baking soda and salt. Stir to combine. Stir in the chocolate chips.
Divide the batter between the 12 muffin cups. Bake for 25 minutes, or until the tops are firm.
Store in an airtight container in the fridge or freezer.
