Chocolate Pumpkin Rawnola Parfaits
This recipe is amazing year round, but our wellness community loves it around the holidays.
It’s simple to make, and great to bring to parties, or to use as the featured dessert for holiday meals. (you can easily double or triple the recipe ingredients for larger quantity)
Rawnola is a no-bake version of granola that can be made in just a few minutes and is every bit as delicious. It has great contrasting texture and is filled with healthy goodness!
For this recipe, which comes courtesy of Nutriholist, we’ve added some extra healthy ingredients, including a scoop of Detox Organics Chocolate Daily Superfoods.
Ingredients — Serves 4
- 1/3 cup dates, pitted
- 1/2 cup pumpkin puree (can also use squash)
- 1 cup raw pumpkin seeds
- 1 cup raw sunflower seeds
- 1/4 cup chia seeds
- 1 cup unsweetened coconut flakes
- 2 scoops Detox Organics Chocolate Superfoods Powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/2 teaspoon sea salt
- 2 tablespoons raw cacao nibs
Add the dates and pumpkin to a food processor and pulse a few times to break them up. If you don’t have a food processor, you can chop the dates and mix everything together in a bowl.
Add the rest of ingredients and pulse the machine for few more seconds (or stir vigorously) so that everything is thoroughly combined.
Serve in a parfait with coconut yogurt and fruit, on top of smoothie bowls—or whatever you like! You can store leftovers in an airtight glass jar in the fridge for several weeks.
